VERY Flavorful Braised Chicken!

We LOVE chicken thighs at our house so I couldn't WAIT to make Alex's Braised Chicken with Tomato. It was SO incredibly flavorful with the cumin and cinnamon and of course, I had to kick it up a notch with EXTRA chili flakes. Yes, we like it SPICY! YUM!

Tropical Pork Curry

The Title really says it all. Pork with tropical flavors like Garam Masala, ginger, brown sugar and of course, tropical fruit! Sweet and spicy and the best over rice noodles!
Ingredients:

1 Tbsp vegetable oil
1/2 lb pork, cut into cubes
1/4 c onions, diced
1 tsp fresh minced ginger
1 tsp Garam Masala
1 tsp curry powder
1 tsp brown sugar
1 4 oz Tropical Fruit cup
1 c tomatoes, diced, undrained
Rice noodles, for serving
Green onions, for garnish

Prep:

1. In a Dutch oven, heat oil over medium-high heat. Add pork and brown on all sides, 5 minutes. Remove pork and keep warm.

2. Add onions ginger, Garam Masala, curry and brown sugar. Cook for 5 minutes, until onions are softened.

3. Stir in fruit and tomatoes, with juice and bring to a boil. Add pork back, cover and lower heat to a simmer. Cook until meat in cooked through and sauce is thickened, 10 minutes.

4. Serve over rice noodles and garnish with green onions.

I have an obsession with any type of baked pasta dish so when I came across Baked Pasta with Tomato Cream and Spicy Sausage, I just couldn't resist. It was such a quick and easy meal too! Spicy and creamy, a winner all around!

Enchiladas Casserole Style!

My hubby LOVES Enchiladas so when I came across this Enchilada Pasta Casserole recipe, I knew I had to make it ASAP. It was so easy and came out so incredibly good! Instead of the corn and green chiles, I used Trader Joe's Spicy Corn Salsa, which gave the dish an even deeper Mexican taste. I DEFINITELY recommend this recipe!

BBQ Beef and Bowties, Who Knew?

I'll admit, I was a little bit skeptical when I came across BBQ Beef and Bowtie but since I do trust Betty Crocker and we already had an open bottle of BBQ Sauce in the fridge, I thought I'd give it a try. Guess what? It turned out great! I used the corn salsa from TJ's instead of regular corn to kick up the flavor even more. My hubby said it tasted like BBQ Sloppy Joe mixed with pasta which sounds a bit weird but we loved it!

Sausage and Fresh Tomato Sauce, a Perfect Combo!

I've recently been on a Sausage kick and decided to make Pasta with Fresh Tomato Sauce from Aidell's website. If you're not familiar with the brand, you must be living under a rock. ANYWAY, the fresh tomato really added a nice touch to the regular old marinara sauce we're used to. VERY spring-like and refreshing!

Can't Go Wrong with Cheesy Meatballs!

We LOVE LOVE LOVE Meatballs at our house so I'm always looking for new ways to make them. When I came across these Parmesan Meatballs, I knew I needed to make them ASAP! OMG they were good! Cheesy and super moist from the fresh breadcrumbs. I served them over some Bowtie Pasta and YUM YUM YUM!

EASIEST Pasta Dinner EVER!

It's Monday and I'm feeling lazy so I decided to make Baked Rigatoni with Sausage. Why? Because it doesn't get easier than boiling some pasta, heating up already-cooked sausage with store-bought sauce and throwing everything in the oven with cheese on top. Seriously, that was the extent of my cooking and it produced an amazing meal!

Celebrating Cinco de Mayo with Enchilada Casserole!

What's better than Enchiladas on Cinco de Mayo? Enchilada Casserole! This was seriously a genius idea! Combining 2 of our favorite meals into 1. The addition of cream cheese in the pasta sauce just added to the awesomeness of this dish. I can't think of a better way to celebrate a Gringo Mexican holiday! LOL.

When I find a recipe from Fine Cooking, I know I can't go wrong. Tonight, I made Rigatoni with Spicy Sausage and Goat Cheese and it did NOT disappoint. I didn't have any squash so I left them out and the sausage and goat cheese definitely did not miss them!

Shrimp and Goat Cheese...YUM!

We always have goat cheese in the fridge for snacking but tonight, I decided to use it in Penne with Shrimp and Goat Cheese. You really can't go wrong with a recipe from Bon Appetit. I mean, they're like the ones that invented cooking magazines! LOL. But seriously, the flavor combination was amazing! The juicy tomatoes, caramelized onions, succulent shrimp...perfection in a bowl!
