Tonight's yummy dinner was inspired by a Pear and Pork Stir-Fry recipe that I came across on Hormel's website. I made a few changes to make the dish a bit more tropical and below is my version. I call it Tropical Pork Stir-Fry! 
Ingredients: 
12 oz pork filet, cut into strips 
1 Tbsp cornstarch 
2 Tbsp orange juice 
1 Tbsp Hoisin Sauce 
2 cloves garlic, minced 
1 tsp cornstarch 
1 tsp Sambal Oelek 
1/4 tsp ground black pepper 
1 Tbsp vegetable oil 1 Dole Tropical Fruit Cup 
4 green onions, cut into 1-inch pieces 
Salt, to taste 
Prep: 
1. In a medium bowl, dredge pork in 1 Tbsp cornstarch. Set aside. 
2. In a small bowl, stir together juice, hoisin sauce, garlic, cornstarch, Sambal Oelek and pepper. Set aside. 
3. Heat oil in a skillet over high heat. Add pork and brown 5 minutes on each side. Remove and keep warm. 
4. Add sauce mixture to the skillet and deglaze for 5 minutes. Add pork back along with fruit, green onions and salt. 
5. Reduce heat, cover and simmer 5 minutes until sauce is thickened and pork is cooked through.
