I hope everyone enjoyed their long Memorial Day weekend as much as we did! I got out of work early on Friday and we had planned on going somewhere outdoors for happy hour but the weather was just NOT warm enough. Instead, I made us a beautiful cheese and crackers platter at home to enjoy with some drinks. Can't beat that even with happy hour prices!
For dinner I decided to get all fancy with Prosciutto-Wrapped Lobster Tails! Yes, they were as good as they sound! No real recipe here. I just cracked open the lobster tails, wrapped them in a piece of Prosciutto and then poached them in butter. It doesn't get better or easier than that!
For a sweet treat, I made Cookies with PB Oreo's in them inspired by Sally's Baking Addiction. I left out the chocolate chips and sprinkles and doubled up on the Oreo Cookies. The batter ended up being pretty stiff so I didn't even have to chill it. These cookies are amazing and so full of Oreo's!
We ended the weekend with one of my favorite go-to recipes, Campbell's Super Moist Pork Chops. I love how simple these are to make and I always have Cream of Mushroom Soup on hand. I added fresh mushrooms and onions for more flavor and it never fails!

Trader Joe's to the Rescue
We LOVE just about everything from Trader Joe's and one of our favorites is their Lobster Ravioli. For less than $4, you get a gourmet meal for 2 that takes just 15 minutes to make. I like to serve them in an Alfredo Sauce topped with some extra cheese. Simple yet incredible on a Saturday night!

Happy Valentine's Day with Lobster Tails!
These are not your ordinary Lobster Tails, they're Crabcake-Stuffed Lobster Tails! I don't have an actual recipe for these but I basically just mixed together crabmeat, breadcrumbs, an egg yolk and seasoning and topped my lobster tails with it. Then I baked everything in the oven for about 20 minutes and I was rewarded with the BEST Valentine's Day present ever, good food! :)

Happy Chinese New Year!
You must wonder what type of horrible Chinese person I am to not acknowldege Chinese New Year. Well I'm definitely NOT a horrible person and I decided to celebrate with some LOBSTER! Not Chinese but INCREDIBLY delicious! I just cooked the tail meat in some melted butter and served them over mashed potatoes. I don't care what nationality you are, this is a GOOD DINNER!

Lobster Tails to Welcome 2013!
The year's flown by and now it's time to celebrate the new year! Well, almost, but Lobster Tails were on sale so I thought I'd celebrate early. These stuffed lobster tails look really fancy (and tasty!) but they were actually really easy. You just list the meat out of the tail and then add a mixture of fresh breadcrumbs, melted butter and garlic on top. Then baked in the oven for about 15 minutes and you've get the best lobster meal of your life!

Simple Yet AMAZING Lobster Tails!
When you have something like huge lobster tails, simplicity is the way to go. Tonight, I took the meat out of the shells and poached them in butter. Yup, that's it, just melted butter. I served them over couscous, topped with my go-to Blender Hollandaise Sauce kicked up with cayenne. The most AMAZING way to start the weekend!

Not the Best Lobster We've Had
Lobster Tails were on sale so I decided to make Butter Poached Lobster with Tomatoes. It was just ok and definitely not the best we've had. The lobster meat broke down quite a bit and was not as potent as we'd liked. Next time, I'll definitely leave them whole!
