Perfect Breakfast Bites

If you haven't seen no-bake bites around the web, let me help you get out from that rock you're living under! (JK) I actually just started making them recently and now I'm totally hooked. These bites are perfect for breakfast because they're made with my favorite morning ingredients like oats, flax and PB. I've never added coconut to my oatmeal but I'm thinking that might be a great idea! My go-to oatmeal is the Simply Balanced Oat and Quinoa Blend from Target and I always add some Garden of Life Flax and Chia to it for extra nutrients. The measurements here don't have to be too precise since they're not baked. As long as the dough comes together, they're good to go!


Ingredients: (12 bites)

1 c oats
1 c coconut flakes
1/2 c flax seed
1/2 c PB
1/2 c honey
1 tsp vanilla extract

Prep:

1. Mix all the ingredients together to form a dough.
2. Use a cookie scoop to portion out dough and form into balls.
3. Store in the refrigerator.

French Toast Made the Night Before!

I've been so busy on weekend mornings that I haven't had time to make brunch in a while now. So when I saw a few recipes online for Overnight French Toast that's assembled the night before and then just baked in the oven the next morning, I knew I had to give it a try. My hubby LOVES French Toast so it was a winner all around! The bread turned out very light and fluffy and we both loved it!


Ingredients:


4 slices sourdough sandwich bread, cut into 1-inch cubes (2 cups)
2 large eggs
1/2 c of half-and-half
2 Tbsp maple syrup (plus more for serving)
1 tsp of vanilla
1 tsp of cinnamon


Prep:


1. In a bowl, whisk together eggs, half and half, maple syrup, vanilla and cinnamon. Add bread cubes and toss until all of the cubes are coated. Pour into buttered dish.


2. Cover and chill in the refrigerator for at least 1 hour and up to overnight. Bake at 350°F for 20-25 minutes.

Blueberry Muffins by Paula Deen Y'all!

I know I can never go wrong with a Paula Deen recipe, especially when it comes to baking. Since my in-laws are visiting this weekend and love breakfast food, I whipped up a batch of her Blueberry Muffins. They were definitely yummy treats and sure to please! Thanks to Paula once again y'all!

My Go-to Hollandaise Sauce

My hubby LOVES Eggs Benedict. In fact, it was the first dish I ever (attempted) to make for him. It was before I started cooking and well, let's just say we ended up going out for brunch. Ever since then, I've perfected my poached eggs but for the longest time making Hollandaise Sauce from scratch scared me. It just seemed so complicated and the McCormick Sauce Mix tasted ok so I was happy with that. Not anymore though! Ever since I discovered this easy blender recipe, I've never gone back to the mix. It's easy and just SO much better! This Sunday, I decided to whip up some Eggs Benedict to thank my hubby for cleaning our dining room. And as always, we devoured every last bite!

Because Everyday is Special!

It doesn't have to be a special occasion to spoil yourself with some yummy Eggs Benedict! It was another foggy Saturday in SF so I decided to cheer us up. It's been a while since I made Eggs Benedict and I just can't believe how easy it is now! I used to be so intimated with poaching eggs and would literally go through about half a dozen before I got it right! I guess practice makes perfect right? McCormick's Hollandaise Sauce Mix also makes my life so much easier. I can honestly say that it tastes just as good as made-from-scratch sauce and believe me, I've made them plenty of times! My secret is adding a bit of Dijon Mustard at the end to give it that tangy goodness we love!

The Last of My Corned Beef

Ok no more Corned Beef for a while, I promise! I used the last of it to make some scrambled eggs this morning. It was a decent breakfast but I'm sure it would've been better if we hadn't had Corned Beef all weekend! I'm glad we got to try it in so many different ways though but I'm not sure if I'll be making it again any time soon.

Left-Over Corned Beef Turns into YUMMY Hash!

I was flipping through my new Food Network Magazine and saw a recipe to make a yummy breakfast hash using left-over Corned Beef. Did they just read my mind? I immediately knew what we were having on Saturday! I still had about half of my Corned Beef left so I used most of that along with the left-over potatoes and carrots. I have no idea what made me think of adding that fried egg on top but it was perfect! What a nice way to start the weekend!
