I came across this recipe for Indian Fish Coconut Curry but since my hubby's not a big fan of fish, I decided to substitute Imitation Crabmeat instead. The verdict? VERY good! You can't go wrong with coconut curry and of course, you know we both LOVE Imitation Crabmeat!

Rice Noodles and Crab? Can't Go Wrong!
We LOVE LOVE LOVE rice noodles and imitation crab so when I came across Vermicelli and Crab Meat Stir Fry, I couldn't resist. Yes, I know I sorta cheated with the imitation crab, but we really do love it even more than real crab meat. (I know, CRAZY!) It was so flavorful and easy too. A winner all over!
With a fried egg on top, of course!

Crabby Pad Thai
My hubby LOVES Pad Thai and I've finally figured out how to make it just the way he likes it after years of practice. Nowadays I can pretty much make it with anything but he especially likes it with Imitation Crabmeat. My recipe is obviously NOT authentic (I realize that ketchup is not from Thailand) but it's super flavorful and just the way we like it!
Ingredients:
2 Tbsp ketchup
2 Tbsp lime juice
1 Tbsp soy sauce
1 Tbsp fish sauce
1 Tbsp brown sugar
1 Tbsp vegetable oil
2 eggs, lightly beaten
1 garlic clove, minced
1 tsp ginger, grated
8 oz imitation crabmeat
Rice noodles, cooked
2 green onions, sliced
Sesame oil, for drizzling
Prep:
1. In a small bowl, stir together the ketchup, lim juice, soy sauce, fish sauce and brown sugar.
2. Heat oil in a pan over medium heat. Add eggs and scramble until set. Remove and set aside.
3. Add garlic and ginger and cook for 1 minute, until fragrant. Add the sauce mixture and bring to a boil.
4. Turn heat down to low and add the carbmeat, noodles and green onions. Stir and heat through. Drizzle with sesame oil and serve.

Nothing Run Down about THIS Rundown!
I had no idea what Rundown was when I came across recipe for Curry Crab Rundown. Apparently it's a Caribbean dish featuring seafood simmered in a spicy coconut sauce. Hey, there's nothing I don't love about the sound of that! I used Imitation crabmeat instead since my hubby loves it and served it over some Coconut Rice. All the flavors were amazing together and we definitely loved it!

Sweet and Spicy, Just the Way We Like It!
I've been saving this recipe for Chili Crab Pasta for a while now and finally made it tonight. I substituted Imitation Crab, which we both love, and it turned out to be an amazing meal! I LOVED the combination of sweet and spicy and kicked it up a notch by adding some Sriracha since we like things extra spicy! I served the crabmeat over rice noodles and it was the perfect quick and easy weeknight meal!

Crabby Manicotti
These Crabby Manicotti are another dinner straight from my pantry and fridge. I always have cans of crab, tuna and salmon on hand as well as every type of pasta imaginable. I also stock up on cream cheese, ricotta or cottage whenever they go on sale since they last a while in the fridge. Tonight, I stuffed Manicotti shells with a mixture of crabmeat and cream cheese and it was simply amazing!
Ingredients:
6 oz cream cheese
1 c whole milk
1 tsp dried dill
1 tsp lemon pepper
1/2 c shredded mozzarella cheese
1 (6 oz) can crabmeat
1/4 c shredded Parmesan cheese
1/4 c bread crumbs
8 Manicotti shells, cooked as directed
Prep:
1. Preheat oven to 350°. Grease a baking dish.
2. In a medium saucepan over low heat, mix together cream cheese, milk, dill and lemon pepper. Heat until cream cheese is melted. Remove from heat and stir in mozzarella and crabmeat.
3. Stuff 2 tablespoons of filling into each Manicotti shell. Place shells in baking dish. Spoon remaining fiilling mixture over shells and top with Parmesan and breadcrumbs.
4. Bake for 20-25 minutes, until top is golden and cheese is bubbly. Let cool 10 minutes before serving.

Pantry Dinner at its Finest!
Tonight my fridge is looking pretty empty and I'm too tired to go to the grocery store. Not to fear cuz I have a stocked pantry and that means I can whip up some Crab Fried Rice in no time! These are really ingredients that I always have on hand and they really are life-savers on weeknights! Even when I say that my fridge is empty, I'm still always guaranteed to have some eggs, onion, garlic, butter and milk, which to me are the bare minimum items for survival. Trust me, when you have those few things and a stocked pantry, you'll never need to order takeout!
Ingredients:
1 Tbsp butter
2 eggs, beaten
1 Tbsp vegetable oil
1/4 c onion, chopped
1 clove garlic, minced
1 tsp ginger, grated
2 Tbsp oyster sauce
1 Tbsp soy sauce (or fish sauce)
1/2 Tbsp sesame oil
1/2 Tbsp sugar
1 (6 oz) can crab meat, drained
2 c cooked rice
2 green onions, chopped
1 egg, fried
Prep:
1. Melt butter in a non-stick skillet on medium heat. Add beaten eggs and spread out in an even layer. Cook until eggs are set, 5 minutes. Remove and chop into slices.
2. Add oil into the same skillet. Once oil is hot, add onion and cook until softened, 3 minutes. Add garlic and ginger and cook until fragrant, 1 minute.
3. Add oyster sauce, soy sauce, sesame oil and sugar and stir to combine. Add crab meat and rice. Cook until everything is heated through, 5 minutes.
4. Stir in green onions and reserved egg slices. Top with fried egg and serve.

FINALLY, Crab Cake Mac and Cheese!
You don't know how long I've been wanting to make Rachael Ray's Crab Cake Mac and Cheese. Ever since I watched her make it on her new show, Week in a Day, I've been dreaming about how yummy the combination of crab cake and mac and cheese must taste! Tonight, I finally made it and it's even better than I could've ever imagined! I used a can of Chicken of the Sea Premium Crab Meat and Old Bay Lemon and Herb Seasoning cuz I knew the combination makes great crab cakes. The recipe made a HUGE dish and we have a ton of left-overs, which I'm totally looking forward to cuz Mac and Cheese really is even better the next day!

The ULTIMATE Crab Cakes
I caught a bit of Tyler Florence making his Ultimate Crab Cakes the other day and have been wanting to make them. I mean, Imitation Crab is good and all but nothing beats REAL lump crabmeat and the price isn't too bad at Costco. We're not big fans of Cilantro so I substituted Parsley. I also topped my cakes with some Mustard Aioli from William Sonoma instead of making Tyler's Garlic Aioli with Celery Root cuz 1) I'm lazy and 2) celery root scares me! These crab cakes were AMAZING and just perfect on a sunny Sunday afternoon!

I Bought A Jar of Mustard Aioli...
I picked up a jar of Mustard Aioli from William Sonoma last week during their Annual Winter Sale and couldn't wait to try it! (You know me and my condiments!) I was thinking about making Fish Sandwiches but saw this can of Lump Crabmeat at Trader Joe's and decided that Crab Cakes would be even better! I was SO right! The Aioli paired perfected with the crab and I used fresh breadcrumbs which made them light and very moist. I'm definitely glad I have more Aioli left to experiment with!
Ingredients: (6 crab cakes)
3 Tbsp butter, divided
1 shallot, chopped
1 Tbsp sour cream
1 Tbsp mayo
1 tsp dried mustard
1 Tbsp Worcestershire sauce
1 tsp hot sauce (I used Tobasco)
1 lb lump crabmeat
1 c fresh bread crumbs
2 Tbsp vegetable oil
Mustard Aioli
Green onions or chives(optional)
Prep:
1. Heat 1 Tbsp butter in a small skillet over medium heat. Sauté shallots until soft, about 5 minutes. Set aside to cool.
2. Mix together sour cream, mayo, mustard, Worcestershire sauce and hot sauce. Add crabmeat and bread crumbs. Stir until combined. (Do not overmix!) Shape in 6 patties.
3. Heat 1 Tbsp oil and 1 Tbsp butter in a medium skillet over medium-high heat. When butter has melted, place 3 patties in the skillet. Cook for about 5 minutes, until the bottom has browned. Carefully flip the patties over and cook another 5 minutes on the other side. Remove from skillet and add the remaining oil and butter. Repeat with the remaining 3 patties.
4. Serve warm topped with Aioli and a sprinkle of green onions or chives, if using.

Crabby Lasagna Rolls!
Lasagna Rolls pretty much make an appearance at our house at least every other week. I try to switch it up a bit though, so this time, I used a can of crab instead of the usual ground beef or sausage. The verdict? AWESOME! I guess crabmeat makes them a bit more gourmet and trust me, opening up a can takes even less time than browning up some meat! And on a Sunday night when I'm doing laundry, vacuuming and trying to watch football at the same time, SIMPLICITY is EVERYTHING when it comes to dinner!

The Easiest Crab Cakes EVER!
I'm so sad my Mommy Weekend has come to an end but we had SUCH a wonderful time together! I decided to make crab cakes for an early dinner before my mommy had to drive home. I found this easy recipe from Chicken of the Sea and added some chopped roasted red peppers for color. I served them on top of a bed of sautéed spinach and mushrooms. Simple, healthy and of course, REALLY yummy! I'm sure we'll be spending another weekend together real soon mommy! MUAH!
