Throwdown with Bobby Flay is such a great show and I love how he gets beat but is always humble to the champion. When I watched his Meatballs Throwdown, I KNEW I had to make the meatballs that won. These were seriously AMAZING! Moist and so flavorful even served with store-bought marinara sauce.

Easy Weeknight Chicken Paprikash
Chicken Paprikash is such a comforting meal and when you use frozen chicken tenders, it's a snap to make. There's nothing better on a Monday night!
Ingredients:
1 Tbsp butter
1/4 c onions, diced
1 c mushrooms, sliced
1 clove garlic, minced
1 Tbsp tomato paste
1 tsp paprika
1 bay leaf
1/2 c chicken broth
1/2 lb breaded chicken tenders
1 Tbsp sour cream
Egg noodles, for serving
Parsley, for garnish
Prep:
1. Melt butter in a pan over medium heat. Add onions and mushrooms and cook until softened. Add garlic and cook another minute.
2. Stir in tomato paste, paprika and bay leaf. Add broth and bring to a boil.
3. Add chicken and simmer over medium-low heat until sauce thickens slightly. Take off heat and stir in sour cream.
4. Serve over egg noodles and garnish with parsley.

Breakfast for Dinner, Paula Deen Style!
I get the Paula Deen Newsletter sent to my inbox and they're always filled with yummy recipes. Tonight, I tried her Classic Omelet and it did NOT disappoint! The only change I made was using Pancetta instead of bacon cuz my hubby doesn't like bacon. (I know, I think he's crazy too!) Anyway, it was a wonderful breakfast for dinner and we devoured every bite!

Rice Noodles and Crab? Can't Go Wrong!
We LOVE LOVE LOVE rice noodles and imitation crab so when I came across Vermicelli and Crab Meat Stir Fry, I couldn't resist. Yes, I know I sorta cheated with the imitation crab, but we really do love it even more than real crab meat. (I know, CRAZY!) It was so flavorful and easy too. A winner all over!
With a fried egg on top, of course!

Rachael Ray-Inspired Pork Chops
Tonight's yummy dinner was inspired by Rachael Ray's Breadeded Pork Chops with Sage Creamy Gravy. I made things even easier on myself by making the entire dish on the stovetop. Of course, no breaded pork chop meal is complete with mashed potatoes!
Ingredients:
2 1-inch bone-in pork chops
1/4 c flour
1 Tbsp olive oil
1 Tbsp butter
1/2 c mushrooms, sliced
1/4 c onions, diced
3/4 c heavy cream
Prep:
1. Dredge the pork chops in the flour. Heat oil in a Dutch oven over medium-high heat. Add the chops and brown 5 minutes on each side. Remove and keep warm.
2. Add butter and lower heat to medium-low. Add the mushrooms and onions. Cook until softened, 5 minutes.
3. Stir in the heavy cream and bring to a boil. Add chops back and cover. Simmer until meat is cooked through, 10 minutes. Serve over mashed potatoes.

Ketchup and Ground Beef, How can it NOT be Yummy?
This is a recipe that I've come up with from looking at lots of different Mac and Cheese and ground beef recipes. It's kind of a hybrid but believe me, it's SO incredibly good!
Ingredients:
1 Tbsp oil
1/2 lb ground beef
1/2 c onions, chopped
1 c mushrooms, diced
1 can (10-3/4 oz) condensed cream of mushroom soup
1/4 c ketchup
1 Tbsp Worcestershire sauce
Corkscrew pasta, cooked
1/4 c Mozzarella Cheese, shredded
1/4 c breadcrumbs
Prep:
1. Preheat oven to 375. Grease a baking dish.
2. Heat oil in a pan on medium-high heat. Add beef and cook until browned. Add onions and mushrooms and cooked until browned.
3. Stir in soup, ketchup and Worcestershire. Cook until heated through. Stir in pasta.
4. Pour into baking dish and top with cheese and breadcrumbs. Bake for 20 minutes, until bubbly.

No FOOL Whiskey Pork Chop!
I've never been a fan of April Fools so I'm glad no one played any pranks on me. I'm just not into practical jokes whether I'm the giver or the receiver. ANYWAY...for dinner, I made Whiskey Pork Chops (with Jameson, of course! Man, the flavor was just SO perfect with the sour cream, sage and mushrooms. I served the pork with mashed potatoes and there was plenty of gravy to go around!
