Cheesecake Brownie Bites are a Guaranteed Hit!

I've made Cheesecake Brownie Bites at least a dozen times now and they're a guaranteed ever single time! I mean, how can you go wrong with cheesecake AND brownie together right? I made them for the first time at this new job and people couldn't stop raving about them! Yup and 5 dozen gone within an hour! Maybe I should attend an online class on baking and pastry arts so I can make more fabulous treats like these.



Easiest Recipe EVER!


1. Preheat oven to 350ºF. Line mini muffin cups with paper liners.
2. Mix brownies according to package directions. Fill muffin cups about 2/3 full.
3. Mix an 8oz block of cream cheese (softened) with 2/3 cup sugar and 1 egg. Add about 1/2 tsp to the middle of each muffin cup.
4. Bake 20-25 minutes, until a toothpick inserted into the center of a muffin comes out clean.
5. Enjoy all by yourself or share, it's up to you!

Brownie Cheesecake Bites for My BFF!

My BFF, Kat, is visiting and I got to have brunch with her and my other BFF, Helen, at Ironside. They have the BEST deal when it comes to brunch! For $16, you get a buffet of yummy goodness like French Toast, Biscuits and Gravy, Cheddar Grits, Seafood Ceviche (my fav!), Bread Pudding, BACON and Spicy Sausage. Oh and for $10 more, you get BOTTOMLESS Mimosa or $8 fpr BOTTOMLESS Bloody Mary! THIS is the way to start the weekend for sure!




We left VERY FULL and happy especially since I brought my famous Brownie Cheesecake Bites for dessert! These are super easy and always a hit. It's just your basic brownie mix with a mixture of a package of Cream Cheese, 1/3 c Sugar and an egg dropped in the middle. I makes about 8 dozen bites so everyone can have as many as they want!

Mexican Brownie Bites to Welcome Cinco de Mayo!

It's almost time for Cinco de Mayo yet so I baked some Mexican Brownie Bites. What makes them Mexican? Well, I added some cinnamon and chipotle powder to my favorite Betty Crocker Fudge Brownie Mix so they taste like Mexican Hot Chocolate. You can really taste the kick from the spices and everyone's loving them! Happy Friday!

Testing Out My New Brownie Pan!

I bought the Chocolate Bar Brownie Pan from William Sonoma last week cuz it was just too cute to pass up! I couldn't wait to to test it out I made brownies for this Friday's treat. While I love baking from scratch, when it comes to brownies, I have no problem using a store-bought mix. I don't just use any old mix though! These are the Betty Crocker Fudge Brownies and I chose to make them fudge style. Aren't they SO cute! Happy Friday!

What's Better than a Brownie?

An OREO Brownie! Yea, I know, totally over the top! I just used a box of Betty Crocker Brownie Mix and added 10 crushed Oreo Cookies in them. Simple but AMAZING! Talk about a sugar rush huh? :)
