My birthday technically isn't until Tuesday but I tend to celebrate it early especially if it falls on a weekday. So for my birthday brunch, I wanted nothing more than Stuffed French Toast! I'm a huge lover of sweet and savory dishes so these were right up my alley. I even bought the ham and cheese straight from our local deli so they feel more gourmet than just the grocery-store stuff. AND of course I had to add some fried eggs on top because why not? It's my birthday!

Weekend Eats and a New Kitchen Toy!
I can't believe it's Monday already but we definitely had a fun weekend with some yummy eats! Friday night started off with Teriyaki Sliders which I made even easier by using canned pineapple and coleslaw mix. I swear you can't go wrong with these Hawaiian Sweet Rolls! They're good with everything!
For some Saturday afternoon snacking, I decided to make Rachael Ray's Pepperoni Pizza Puffs. Mine were extra healthy using Turkey Pepperoni and Fat Fat Mozzarella. I'm not sure why she recommends serving red pepper slices alongside these muffins cuz they were perfect on their own dipped in some warm Marinara!
I couldn't resist picking up some Peanut Butter Oreo Cookies at the store and decided to make Cookie-Stuffed Crescents. Talk about total decadence! Seriously, whoever thought up this recipe should win an award!
Saving the best for last, I finally tested out my Babycakes Heart Waffle Maker! I am totally in LOVE with it! These are just basic waffles but I'm thinking of all kinds of yummy recipes to make! Chocolate Waffles anyone?

Hubby Requested Pancakes
Sadly my hubby has to travel for work next week so when he requested pancakes for brunch on Saturday, I gladly said "OK!" I decided to go with Giada's Ricotta Pancakes cuz we've both loved them in the past. Instead of adding blueberries to the batter, I used Krusteaz Blueberry Pancake Mix, which I always keep on hand. They turned out just as good as we remembered! The ricotta made the pancakes so fluffy and added a wonderful creamy texture. Instead of making Giada's Honey Syrup, I used our favorite Aunt Jemima's Butter Rich Syrup, which I also always keep in the fridge. The plates looked a little empty so I thought some sunny-side eggs would be a good addition. Can't go wrong with fried eggs for brunch right? This should keep us full till dinner!

My (Cheater) Version of a Croque Madame!
For once I was up early enough to make us a nice brunch on a Saturday morning. The idea of Croque Madame came up but I wasn't really in the mood to make the traditional sauce from scratch and I definitely didn't feel like driving out to get Gruyère cheese. So, I decided to make the sandwiches my way, with roast beef, Smoke Gouda and spicy mayo in between sourdough bread. I browned one side in a cast iron skillet, topped them with shredded Monterey Jack, then broiled them in the oven for a few minutes. Of course, a Croque Madame is only a lady after you top it with a fried egg. Yummy and so much easier than the traditional way! We are ready to start our weekend!

Welcoming My Hubby Back with Eggs Benedict!
I've become somewhat of a pro when it comes to Eggs Benedict since it's my hubby's favorite brunch item. He's been traveling overseas all week and requested it as his "Welcome Home Meal", so of course, I was happy to make it for him! This time, since Avocados were in season, I added a few slices and he loved it! The creamy texture went so well with the salty Canadia Bacon and runny egg yolks. Of course, my go-to Blender Hollandaise Recipe never fails me!

Greg Wanted More Crêpes!
It's been a while since I made my first batch of Crêpes so I happily obliged when Greg asked for them. It was a rainy Sunday, which was perfect for staying in and making a yummy brunch! I used the same blender method to mix the batter and then let it sit in the fridge for about an hour. Then I cookied the Crêpes and stuffed them with some Swiss Cheese and Honey Ham. This time, instead of adding the mushrooms inside the filling, I made a gravy with it instead. Savory Crêpes definitely make the perfect brunch on a lazy Sunday afternoon!

Bisuits + Gravy = The PERFECT Saturday Brunch!
After my recent discovery of how easy it is to make Biscuits and Gravy from scratch, I feel the need to make it at least every other month. It's just the perfect comfort food to start the day! The smell of warm biscuits baking in the oven is definitely worth every minute of kneading. My last plate was a bit too heavy on the gravy side so I resisted the urge to shower my biscuits this time. What a perfect way to start the weekend!
