You would think after 4 days of turkey, we'd be sick of the bird but not us! We LOVE turkey and tonight, I made Rachael Ray's Chipotle Turkey Chili with Apples and Cheddar and instead of tortilla chips, I served them over the easiest biscuits EVER! Seriously and they're made for 2 instead of a whole dozen cuz really, who really like reheated biscuits right? 1/4 cup flour, 1/4 cup cornmeal, Italian seasoning, garlic powder, 1/4 cup cheese and 1/4 cup milk stirred together and baked in the oven. DONE! A yummy comforting meal on a REALLY rainy night!

Mini Cheddar Biscuits
I haven't made biscuits in a while so I decided to whip up some mini cheddar ones. Why mini? Well, because mini things are just cuter, of course! They also make you feel less guilty about eating more than 1!
Ingredients: (about a dozen mini biscuits)
1/2 c (1 stick) butter, melted
2 eggs
1/2 c grated sharp Cheddar cheese
1-1/2 tsp baking powder
1/2 tsp salt
1/2 tsp ground pepper
1/4 tsp garlic powder
2 c all-purpose flour
Brush:
1 Tbsp butter, melted
1 tsp Italian seasoning
Prep:
1.Preheat oven to 350ºF. Line baking sheet with parchment paper.
2. Whisk together the melted butter and eggs until creamy. Add the cheese and mix until combined. Add the baking powder, salt, pepper, garlic powder and flour and mix well.
3. Roll out dough onto a floured surface to 1/4-inch thick. Cut out small circles with a biscuit cutter and place onto baking sheet.
4. Brush wash on top and bake for 20 minutes, or until golden.

Red Lobster Biscuits for My Mommy!
It's my mom's birthday today and we're celebrating with her tomorrow so I decided to bake her favorite Red Lobster Biscuits. Whenever we go to the restaurant, she can seriously polish off the entire basket by herself and that's BEFORE her entree showed up! I came across this TOP SECRET recipe a while ago and it works like a charm every time. Bisquick, who knew? LOVE IT!

Blue Cheese is an Acquired Taste
I've acquired it but Greg hasn't! I've never met a cheese I didn't like and most of the time, the stinkier the better. Greg, on the other hand, likes the more mild ones like cheddar and mozzarella. He even thinks Feta is a bit strong for him. Oh well, more Blue Cheese Scallion Biscuits for me! :)

Miniature Versions of Ina's Buttermilk Biscuits
I watched Ina make some Buttermilk Cheddar Biscuits for her Breakfast Party and they looked SO yummy! I don't make Biscuits too often as cuz it's such a hassle cutting in the butter with my pastry cutter or food processor and using my fingers tend to get really messy. Ina used her stand mixer and it was so much easier (and WAY less mess)! The trick is to keep all the ingredients really cold and work fast so the butter doesn't start to melt. I thought it'd be fun to make mini biscuits so I used a 2-inch fluted cutter and cut down the baking time to 15 minutes. I also sprinkled parmesan cheese on top instead of salt to give the biscuits a more flavorful crust. They came out flaky, cheesy and yummy, not to mention cute! This batter made about 2 dozen mini biscuits and I'm pretty sure we ate about a dozen tonight so that tells you how good they are! I think I need to take the rest to work before we eat them all! :)

Sometimes You Just Gotta Get Your Hands Messy!
I love making drop biscuits cuz they're so easy but sometimes I just wanna get my hands messy and work some dough! I bought some Prosciutto at Trader Joe's a while back and totally forgot about it until I saw these Cream Biscuits with Prosciutto and Parmesan. I cut the recipe in half and made 8 BIG biscuits. (We like our biscuits really think so we can slather LOTS of butter in the middle!) They were SO SO good! The smokey Prosciutto and salty Parmesan added such good flavor and we gobble up half of them hot from the oven (with LOTS of butter)! I can't wait to have more tomorrow for breakfast!

Grated Butter Makes Flaky Biscuits!
I've been craving some savory treats so when I saw this recipe for Ham and Cheddar Biscuits I knew I had to make them! I just watched Big Daddy's House over the weekend where Aaron made Cheddar Scones and he grated the butter into the mixture. I loved the idea since I hate getting all messy working with my fingertips or having to dirty my big food processor. It totally worked and the biscuits came out so flaky and perfect! I also added some parsley for flavor and flavor. The recipe didn't say how many biscuits it makes but I ended up with a dozen using a 3-inch cutter. Savory treats are the best!

The Easiest Biscuits EVER!
Having Bisquick around really does mean I can make biscuits in a flash. This is my foundation recipe and I just basically add whatever herbs or veggies I feel like. I even like to add meat sometimes to make a meal out of them. Tonight, I kept it simple and just added some chopped green onions and Parmesan to the butter topping. Easy and yummy!

Easy and Cheesy!
I LOVE biscuits and these Cheeesy Biscuits were awesome! They baked in no time and filled my kitchen with the yummy smell of CHEESE! Drop biscuits are just so much easier to make without having to knead and roll out the dough. Call me lazy if you want but I like to enjoy my treats without making a mess in the kitchen! I added fresh parsley to my mix and of course, didn't skip the "optional" Parmesan topping. I mean, WHY would anyone do that???

Cream Cheese is Not Only Good as a Spread!
It's also good baked INSIDE the biscuits! If you like cream cheese, you've GOT to try these! I used a Vegetable-Flavored Cream Cheese Spread but you can definitely substitute any type of cream cheese, just soften it if you're using a block. These biscuits are SO moist and flavorful! You really don't need any butter but you really should add just a small dollop cuz they are biscuits after all!
Ingredients: (5 biscuits)
1 c all-purpose flour
1 tsp baking powder
1/4 tsp garlic salt
1/4 tsp black pepper
1/3 c milk
4 oz cream cheese spread
1 egg, beaten
Prep:
1. Preheat oven to 400°F. Line cookie sheet with parchment paper.
2. In a large bowl, whisk together flour, baking powder, garlic salt and pepper. In a small bowl, combine milk, cheese and egg. Add to flour mixture; stir just until dry ingredients are moistened.
3. Drop 1/4 cup dough onto prepared sheet. Bake 15-20 minutes, until golden brown.

A Perfect Recipe
I like putting my own spin on recipes but once in a while I'll find one that's so perfect, I'll actually follow it all the way. These Carrot and Herb Biscuits are a good example. It comes from my Pillsbury Muffins and Quick Breads Cookbook and there was NOTHING I wanted to add or change about it! (I know, SHOCKING!) They're savory, tender, moist and just perfect in every way. See, when you follow the recipe, your results actually looks like the picture!
Ingredients: (12 muffins)
1-1/4 c all-purpose flour
3/4 c cornmeal
1/4 c sugar
3 tsp baking powder
1 tsp dried basil
1 tsp dried parsley
1/2 tsp salt
3/4 c butter, cold, cut into 1/4-in pieces
1/2 c shredded carrots
1/3 c milk
1 egg, slightly beaten
Prep:
1.Preheat oven to 400°F. Line a baking sheet with parchment paper.
2. In a medium bowl, combine flour, conrmeal, sugar, baking powder, basil, parsley and salt; mix well. With pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in carrots.

Easy Mushroom Biscuits
Everyone loved my Savory Mushroom Squares so I decided to make some more treats that featured mushrooms. I found this recipe for Mushroom Biscuits and thought I'd give them a try. I mean, you can't get easier than using Bisquick right? The sautéed mushrooms and onions were soft and added such nice flavors. There's nothing like some warm biscuits after a day by the pool!

I Just HAD to Try My New Fluted Cutters!
I bought a set of fluted cutters and wanted to test them out on these Parmesan Basil Biscuits. I can't say they taste any different but they sure look better! Oh and I brushed my biscuits with an egg wash (1 egg with 1 Tbsp milk) to help with the browning.

Biscuits and Gravy and Chicken Too!
I saw this recipe for Chicken in Mushroom Gravy on the Pillsbury website and knew it would make the perfect Friday dinner. I already had some chicken thighs in the fridge and I always have mushrooms so this was an easy meal to put together. There was no way I'd subject Greg to eating mashed potatoes made with instant flakes though (as Pillsbury suggested on the side) so I made some Buttermilk Herb Biscuits instead. Biscuits and Gravy, a perfect match in heaven right? Comforting and easy and a perfect way to kick off the weekend!

Bisuits + Gravy = The PERFECT Saturday Brunch!
After my recent discovery of how easy it is to make Biscuits and Gravy from scratch, I feel the need to make it at least every other month. It's just the perfect comfort food to start the day! The smell of warm biscuits baking in the oven is definitely worth every minute of kneading. My last plate was a bit too heavy on the gravy side so I resisted the urge to shower my biscuits this time. What a perfect way to start the weekend!

Red Lobster at Home!
In my opinion, the best part about going to Red Lobster is getting those yummy Cheddar Bay Biscuits. I mean, their food is good, but those biscuits are just out of this world! They're brought out in these cute red baskets right after you're seated and we're usually way into our 2nd basket by the time our food arrives. (Might be why we always end up with left-overs.) I was randomly searching for biscuit recipes and when I saw this one, my eyes just lit up! Red Lobster Biscuits at home? OMG! I could not WAIT to get home and make these. I was a bit skeptical at first since the recipe calls for Bisquick but they came out EXACTLY like the real thing! Even if you've never been to Red Lobster, you should try these cuz they're just SO buttery and garlicy and yummy!

More Biscuits and Gravy from SCRATCH!
It's been a while since I made Biscuits and Gravy so I decided to give it another shot. I used the same Gravy recipe as before but this time I made these Parmesan Basil Biscuits, which I found from the Taste of Home website. Again, they turned out AMAZINGLY good and easy! We have a lot left over since the recipe made a dozen and I'm sure they're just as good with some good old butter!

I Have WAY Too Much Dill!
It seems like every time I turn around, my dill has shot up an inch! I really hate to waste my fresh herbs so I went online to see what I could make with them. I found this Cheddar Dill Biscuits recipe from one of my favorite blogs, Baking Bites, and decided to give them a try. They were super easy and quick to make and I love the fact that I only ended up with 4 biscuits instead of a dozen! I also used my mini food processor instead of dirtying up my big one. These biscuits tasted very similar to the Cheddar Dill Scones I made before but a lot softer. You don't really NEED to butter them but you really should! They taste AMAZING with a good smear of Land O Lakes!

Biscuits and Gravy but this time, from SCRATCH!
Greg requested Biscuits and Gravy again and this time, I wanted to make everything from scratch! (Last time I cheated and used Pillsbury Biscuits in a tube.) I followed this recipe from The Cooking Photographer and it couldn't have been easier, thanks to my food processor! I also used her buttermilk substitution with milk and cream of tartar cuz I forgot to get buttermilk. The biscuits came out so flakey and perfect that I really couldn't believe I made them myself! The Sausage Gravy recipe was from Bob Evans (even though I used left-over Johnsonville Sausage) and besides the fact that the sausage chunks pretty much took over the gravy, it was yummy on the biscuits! Will I make Biscuits and Gravy from scratch again? Hell yea! Maybe next time I'll actually serve them for breakfast instead of Friday night dinner. :)
