More Butterfly Baking

I'm totally in love with my Butterfly Baking Pan, especially with this gorgeous spring weather we're having! How cute are these right? They're Banana Yogurt Muffins with Walnuts and Cranberries. I adapted the recipe from a bunch of different ones I found after Googling "banana yogurt muffins". The yogurt kept these muffins really moist and gave it a slight tang, which I love! Enjoy!

Ingredients: (6 muffins)

1 c all-purpose flour
1/4 tsp kosher salt
1/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp Chai spice (optional)
1/2 c vegetable or canola oil
1/4 c packed brown sugar
1/4 c sugar
1 tsp vanilla extract
1 large ripe banana, mashed
1/2 c plain yogurt
1 large egg
1/2 c chopped walnuts
1/2 c dried cranberries

Prep:

1. Preheat the oven to 350 degrees. Spray 6 muffin cups with cooking spray.

2. In a bowl, stir together the flour, salt, baking soda, baking powder, and Chai spice.

3. In a large mixing bowl, mix together the oil, brown sugar, and white sugar. Mix in the vanilla extract, mashed bananas, sour cream, and eggs.

4. Stir in the dry ingredients until combined. Stir in walnuts and cranberries.

5. Fill batter 3/4 way into prepared pan. Bake for 20-25 minutes, until toothpick inserted into center of muffin comes out clean.

Buttery Shortbread Cookies

You would think with all the baking I do, I've probably made Shortbread Cookies a dozen times by now but nope, my first batch EVER! I guess the reason would be that I'm really impatient and don't like recipes that require chilling the dough for 2 hours. I've found a workaround, however, and discovered the freezer method! I chilled the dough in the freezer for only 20 minutes and it was good to go! Buttery and soft, these cookies are definitely yummy Friday treats!

Ingredients: (3 dozen cookies)

1 c (2 sticks) unsalted butter, softened
1/2 c firmly packed brown sugar
1 tsp vanilla
2-1/4 c all-purpose flour

Prep:

1. In the bowl of a stand mixer, mix butter, brown sugar and vanilla at medium speed, scraping bowl often, until creamy. Reduce speed to low; add flour. Beat, scraping bowl often, until mixture leaves side of bowl and forms a smooth, soft dough.

2. Divide dough in half. Shape each half into 6x2-inch round log. Wrap each log in plastic food wrap; place in freezer for 20 minutes.

3. Heat oven to 375°F. Cut logs into 1/4-inch slices with sharp knife. Place 1 inch apart onto ungreased cookie sheets. Bake for 7 to 9 minutes or until lightly browned on edges. Let stand 5 minutes before removing from cookie sheets.

Cheesy Pizza Scones

You probably don't think of Pizza when you think of Scones but put the 2 together and you've got some yummy cheesy goodness! These scones have all the wonderful ingredients of a Pepperoni Pizza and are such great savory treats! Perfect any time of the day (with or without the pretty basil on top)!

Because Mini Things are Just BETTER!

I could NOT believe my eyes when I saw Mini Graham Pie Crusts at Target and knew I absolutely had to buy them! What a genius idea right? I couldn't WAIT to make something with them so I went on the Keebler's website to search for a recipe. I knew I found the perfect one when I saw Mini Pecan Pies! Is this not the cutest little pie you're ever seen? It tasted SO good too! I'm totally going back to get some more cuz I'm seeing some other really yummy-looking recipes! At least you can't feel guilty about eating a whole pie when they're mini. ;)

Another Avocado Bread

I never used to think of Avocado as a baking ingredient but my Avocado Banana Bread turned out so yummy that I decided to make another one. This recipe is from the same Avocado website, which I totally LOVE by the way! I used walnuts instead of pecans cuz I ran out and I also added dried cranberries for some extra sweetness. It turned out really good! I think I liked the banana one a lil better just cuz I love banana bread but this is definitely a good variation. Variety is the spice of life right?

Mini Spinach Frittata

Everyone loved the Mini Frittatas I made last time so I decided to make some more. These are Mini Spinach Frittatas from Taste of Home and I omitted the pepperoni on the bottom cuz they didn't fit so well in my mini muffin cups. How cute are they right? A lil crispy on the outside and cheesy on the inside. These Frittatas are definitely a yummy way to get your veggie servings!

Pork Chops Turned into Panini!

I love transforming my leftovers and tonight, my creative juices were flowing again! Remember my Braised Pork Chops? Well, let me introduce you to Pork Chop Panini! I chopped the meat into bite-size pieces and topped them with tomato slices and Smoked Fontina Cheese. SO simple and SO good! Can't waste that awesome pork right?
