Mini Spinach Frittata

Everyone loved the Mini Frittatas I made last time so I decided to make some more. These are Mini Spinach Frittatas from Taste of Home and I omitted the pepperoni on the bottom cuz they didn't fit so well in my mini muffin cups. How cute are they right? A lil crispy on the outside and cheesy on the inside. These Frittatas are definitely a yummy way to get your veggie servings!
