I came across this recipe for Indian Fish Coconut Curry but since my hubby's not a big fan of fish, I decided to substitute Imitation Crabmeat instead. The verdict? VERY good! You can't go wrong with coconut curry and of course, you know we both LOVE Imitation Crabmeat!

Sausage and Pasta Dinner
We always have some sausage in the fridge so tonight, I made a quick Sausage Pasta with Herbed Cream Sauce from the Johnsonville website. It was good, not amazing, but good enough on a weeknight!

Chicken and Apple with Curry, Who Knew?
I would've never thought of combining Chicken and Apple with Curry but it actually turned out surprisingly good! The fruit really brightened up the flavor and the creamy curry sauce just made it perfect!

More Trader Joe's Goodness
If you've ever been to the sausage section at Trader Joe's, you know that there are LOTS of choices. I usually can't decide and try to pick up a different one every time. Tonight, I made Creamy Sausage Pasta with their Spicy Chicken Sausage. REALLY easy and REALLY good!

Goulash Tastes a LOT Better than it Sounds!
What do you think of when you hear the word Goulash? Something gross? If your answer is yes, you feel the same way as my hubby. Tonight though, I changed his minde with Rachael Ray's Pork Goulash with Apple and Onion. It was incredibly flavorful with the paprika, coriander and cumin and the apple really brightened up the dish. Of course, the extra cheesey sour cream topping helped too!

Trader Joe's to the Rescue
We LOVE just about everything from Trader Joe's and one of our favorites is their Lobster Ravioli. For less than $4, you get a gourmet meal for 2 that takes just 15 minutes to make. I like to serve them in an Alfredo Sauce topped with some extra cheese. Simple yet incredible on a Saturday night!

Easy Dinner with a Favorite New Product!
Do you love Pulled Pork but hate how long it takes to make? Well, let me introduce you to Oscar Mayer's new item and an instant new favorite for me. I couldn't wait to use it in this BBQ Pork and Penne Skillet! The pork was AMAZING! So tender and tasted like I spent all day simmering it.
