Using Up Those Extra Apples!

We always seem to have extra apples laying around needing to be eaten so I'm constantly looking for creative ways to use them. This week for Cookie Friday, I decided to switch things up with these Cinnamon Mini Apple Muffins and they were a total hit! Not too sweet and just the perfect bite-size treats!
