Fiesta Friday Night!

I came across this recipe for Taco Pasta Bake and knew immediately that I wanted to make it ASAP! I mean, we LOVE Mexican food and we LOVE baked pasta so this was right up our alley! The only change I made was leaving out the corn since I didn't have any and it wasn't missed at all. Oh yea, of course I had to top it all off with more sour cream!
