Butterscotch Cookies with a Hint of Lemon

I think lemon totally represents spring and they just add a brightness to everything. These Butterscotch Lemon Cookies happened purely by mistake cuz I actually wanted to make some White Chocolate Lemon Cookies but ran out of White Chocolate Chips. I didn't know if the flavor combo would work but the sweetness of the butterscotch paired perfectly with the tartness of the lemon zest! They may look pretty small but they're packed with flavor and just PERFECT for Cookie Friday!




Ingredients: (2-1/2 dozen cookies)


1/2 c (1 stick) unsalted butter, softened
1/2 c packed brown sugar
1 tsp freshly grated lemon zest
1 tsp vanilla extract
2 eggs
1-1/2 c all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
2 c Butterscotch Chips


Prep:


1. Heat oven to 350°F. Lightly grease cookie sheet or line with parchment paper.


2. Beat butter, brown sugar, lemon zest and vanilla extract in a stand mixer until light and fluffy. Add eggs; beat well. Stir together flour, baking soda and salt; add to butter mixture. Stir in chips.


3. Drop by tablespoons onto prepared cookie sheet. Bake 8 to 10 minutes or until almost set. Cool slightly; remove from cookie sheet to wire rack. Cool completely.
