Mac and Cheese Made with Evaporated Milk!

Evaporated Milk is on sale everywhere this time of the year so I stocked up. Tonight, I made Mac and Cheese with it and it came out creamy and delicious! I added some Italian Sausage to the mix and baked it all off in the oven with cheesy breadcrumbs on top. What a great weeknight meal!




Ingredients:


1 Tbsp butter
1/4 c diced onion
2 links sausage, sliced 1/2-inch thick
1 Tbsp cornstarch
1/2 tsp salt
1/4 tsp dry mustard
1/4 tsp cayenne pepper
1/2 can (12 fl oz) Evaporated Milk
1/2 c water
1 c shredded sharp cheddar cheese
1 c dry small elbow macaroni, cooked and drained


Topping:


1 Tbsp butter, melted
1/4 c breadcrumbs
1/4 c grated parmesan cheese


Prep:


1. Preheat oven to 350°F. Grease a baking dish.


2. Melt butter in a saucepan over medium-high heat. Add the onion and cook until soft, 3 minutes. Add the sausage, cornstarch, salt, mustard and cayenne. Cook, stirring, until the sausage is golden, 3 minutes.


3. Stir in evaporated milk and water. Cook, stirring, until mixture comes to a boil. Boil for 1 minute.


4. Remove from heat. Stir in cheddar cheese until melted. Add macaroni; mix well. Pour into prepared casserole dish.


5. Stir together topping ingredients and sprinkle on top. Bake for 20 to 25 minutes or until cheese is melted and light brown.

I bet the evaporated milk makes it even creamier, too. Yum!
