My hubby LOVES Pad Thai and over the years, I've made the dish enough to kinda just wing it. Tonight, I made a version with Imitation Crab (another one of his favs!) and it was a yummy Asian feast! It was also really quick to put together, which is a life-saver on a busy weeknight.
Ingredients:
1 Tbsp oil
2 eggs, lightly beaten
1 Tbsp butter
1 Tbsp oil
6 dried chiles
1 Tbsp grated ginger
4 green onions, chopped (+ more for garnish)
2 cloves garlic, minced
8 oz Imitation crab, chopped
1 tsp fish sauce
1 tsp oyster sauce
1/2 tsp sesame oil
1/2 tsp sugar
8 oz rice noodles, cooked according to package directions
Prep:
1. In a small skillet, heat oil over medium heat. Add the eggs and cook until set. Remove and cut into pieces.
2. Meanwhile, melt butter with oil in another pan over medium heat. Add the chiles, green onion and ginger. Cook until fragrant, 1 minute. Add garlic and cook another minute.
3. Add crab, fish sauce, oyster sauce, sesame oil and sugar. Stir to combine and heat through. Stir in noodles and eggs. Serve garnish with more green onions.
