Can't Go Wrong with Crab and Enchiladas!

My hubby LOVES imitation crab so I knew exactly how I was going to transform these Shrimp and Crab Enchiladas. Basically I just substituted all the seafood with the crabmeat. I LOVED the Monterey Jack Cheese in these and of course, nothing beats sour cream!
