Real Simple Real Fast Chicken Curry

I've been saving this Southern Indian Chicken Curry from Real Simple for a while now and finally made it tonight. I took even more shortcuts by using frozen cooked chicken strips and canned peaches. Yes, I found a way to make "Real Simple" even more simple! :)
