We had some left-over sausage and rice in the fridge so I decided to make some stuffed bell peppers MEXICAN style (which just basically means I added some salsa and chili powder to the meat mixture)! The last time I attempted these, the peppers didn't come out as soft so I did some research and found that you should boil them first until they're nice and soft but still in tact. They turned out great and bell peppers are so good for you that they totally balance out all that cheese! :)

roasting them pre-stuffed works too. i made my grandmother's shumai mixture and stuffed peppers with it. something about stuffing peppers is so homey, no matter what nationality.
Asian style stuffed peppers sound awesome! I'll have to try that sometime.
