Happy Chinese New Year!

I'm far from traditional but having something Chinese for dinner the night before new year's day is a must! I chose Pineapple Fried Rice cuz we both love it (it's Chinese right?) and tonight I cooked up my own version with ground pork and shrimp. It was spicy, sweet, sour and savory all at the same time and just completely delicious! I think this chef DEFINITELY deserves a Red Envelope, what do you think HONEY? HAPPY NEW YEAR!




Ingredients:


2 Tbsp vegetable oil, divided
2 eggs
1/4 c onion, chopped fine
1/2 red bell pepper, finely chopped
1 tsp garlic, minced
1 tsp ginger, minced
2 dried red chilies
1 green onion, sliced, plus more for garnish
4 oz cooked ground pork
1/2 c cooked shrimp, chopped
1 tsp curry powder
1/2 c chopped pineapple, undrained
2 c day old white rice
1 Tbsp fish sauce
1 Tbsp soy sauce
1 tsp toasted sesame oil


Prep:


1. Heat a large skillet over medium heat 1 Tbsp oil. Add eggs and scramble until cooked. Remove and set aside.


2. Heat remaining oil and add onion, bell pepper, garlic, ginger, dried chilies and green onions. Sauté until tender and golden, about 5 minutes.


3. Stir in the pork and shrimp, and season with curry powder. Sauté until heated through.


4. Stir in rice and pineapple with juice and mix with a wooden spoon to break up any lumps. Stir-fry until lightly browned, about 5 minutes, stirring constantly.


5. Stir in fish sauce and soy sauce. Drizzle with sesame oil and garnish with more green onions.
