Tyler Florence's "Ultimate" recipes are just that and they never fail me! Tonight, I made his Braised Lamb Shanks with Green Olives and Apricots and it was a definite winner! Braising the lamb in wine really helps tenderize them cuz shanks can be a pretty tough cut. Then cooking them low and slow for over an hour makes the meat just fall off the bones! I love the addition of the green olives and apricots, which gave the dish a unique flavor and texture. YUM YUM! Thanks Tyler!
