Tonight's yummy dinner was inspired by Rachael Ray's Braised Chicken with Mushrooms from her Week in a Day show. I love the recipes on that show but enjoy cooking every night too much to follow the concept. I watched her make this chicken leg quarters meal and couldn't wait to try it! I did make a few adjustments using ingredients that I had on hand and it turned out to be an amazing meal! The meat was fall-off-the-bone tender and the mushroom-marsala sauce tasted amazing especially on top of Polenta. Thanks again Rachael Ray!
