It's Still Apple Season!

Winter is quickly approaching (12/21!) and that means Apple Season is almost over. There's still time for a few more apple treats though and tonight I made some Apple Oatmeal Raisin Muffins from my Sweet and Savory Muffins Book. They made my kitchen smell like Apple Pie, which is just perfect around the holidays! If you're in love with apples like I am, you should definitely give these healthy and yummy treats a try.




Ingredients: (6 muffins)


1 egg
1/2 c milk
1/4 c oil
1/2 c whole wheat flour
1/2 c oatmeal
1/4 c sugar
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/2 tsp nutmeg

1/2 c raisins
1 small apple, chopped


Prep:


1. Preheat oven to 400°F. Line 6 muffin cups with paper liners.


2. In a bowl, beat egg with milk and oil. In another bowl, whisk together flour, oatmeal, sugar, baking powder, cinnamon, salt and nutmeg. Stir the dry ingredients into the wet just until moistened. Stir in apple and raisins.


3. Fill prepared muffin cups to the top. Bake for 15-20 minutes or until toothpick inserted into the middle of a muffin comes out clean.
