I found a recipe for Maple Oatmeal Cookies in my Everyday Food Magazine and couldn't wait to try them! I mean, what a classic combination right? They turned out amazing and I love how they're thin and crunchy! Even my coworkers who don't usually bake asked me for the recipe!
Ingredients: (5 dozen cookies)
3 c old-fashioned rolled oats
1 c all-purpose flour
1 tsp salt
1/4 tsp baking soda
3/4 c (1-1/2 sticks) unsalted butter, room temperature
1 c packed brown sugar
1/2 c granulated sugar
1/4 maple syrup
1 large egg
1 tsp vanilla extract
1/4 c water
Prep:
1. Preheat oven to 350°F. Line baking sheets with parchment paper.
2. In a medium bowl, stir together oats, flour, salt and baking soda. In the bowl of a stand mixer, beat butter and sugars on high until pale and fluffy, 3 minutes. Beat in maple syrup, egg, vanilla and water, scraping down bowl as needed. With the mixer on low, beat in oat mixture until just combined.
3. Drop dough in rounded teaspoons, 2 inches apart, onto baking sheets. Bake until edges are golden, about 11 minutes. Let cookies cool on sheets until set, about 2 minutes, then transfer to wire racks and let cool completely.
