Yummy Thai-Style Coconut Fish!

Ever since I discovered Coconut Milk, I can't seem to get enough of it! It's good in so many different dishes and we love it with fish. This is a Thai-style Coconut Fish dish that I created by combining a bunch of recipes that I've seen and putting a bit of my own spin to it. It was simple, quick and REALLY tasty!




Ingredients:


6-8 oz catfish fillet (any white fish would work)
1 Tbsp vegetable oil


Marinade:
1/4 c coconut milk
1 Tbsp fish sauce
1/2 tsp chili flakes
1/4 tsp ground coriander


Topping:
1/4 tsp chili flakes
1/2 tsp garlic, minced
1 Tbsp green onion, chopped fine
1/4 tsp grated ginger
1 tsp lime juice
1/2 tsp honey
1 Tbsp fish sauce


Prep:


1. Place fish in a flat dish. Stir marinade ingredients together and pour over fish. Turn fillet in the marinade several times. Place in refrigerator for 30 minutes.


2. Mix together Topping ingredients in a bowl. Set aside.


3. Heat oil in a non-stick skillet over medium-high heat. Gently add the fish in pan and fry 3 minutes per side. Fish is done when flesh turns firm and opaque, and flakes easily.


4. Remove fish to serving plate. Top with topping mixture and serve with rice.

Ooh! Something else to do with catfish. Good idea.

Love coconut in seafood. Makes me think of being on a tropical island even when I'm not. ;)
