Greg's been traveling a lot more than usual these last few weeks and tonight is the only night he'll be home before flying out again! SO I wanted to make him something I know he'll love...Mexican Meatloaf! I love making meatloaf cuz you always end up with a lotta left-overs to make sandwiches or even pasta! (Yes I've done that before and it turned out awesome!) What's Mexican about this meatloaf? Well, it's just basically got salsa and cumin in the mixture. The salsa kept the meatloaf REALLY moist and yummy! I mean, you really can't go wrong with anything ground beef Mexican style right? :)
