My hubby LOVES Enchiladas so when I found this recipe for Chicken Enchilada Pasta, I KNEW I had to make it ASAP. It was every bit as good as I thought it would be! I mean, how can you go wrong with combining 2 of our favorite things, Enchilada and pasta? The cream cheese added such a wonderful creamy texture and the green chilies gave the dish just the right amount of kick that was cooled off by the sour cream. What a yummy way to start the weekend!
