The weather's been unusually nice here so I decided to bake some White Chip Island Cookies. The coconut flakes, macadamia nuts and white chocolate were just the perfect tropical combination! These are the type of cookies that you definitely don't wanna overbake. They should still be fairly soft and only slightly browned on the bottom when they come out of the oven. As they cool, they'll harder a bit but shouldn't get crunchy so watch them carefully! Here's to hoping this summerlike weather lasts through the weekend!
