Ever since I discovered how good coconut curry is on just about anything, I've been using LOTS of coconut milk. They usually cost me about $3 per can so when I saw how much cheaper they are from Amazon, I ordered some right away. I mean, 12 cans really won't last that long at our house, especially when I'm cooking up yummy meals like tonight's Red Curry Pork with Tomatoes! I omitted the snow peas cuz Greg's not a fan and used some chopped Roma tomatoes instead of the cherry and it turned out SO SO good! Creamy with a nice kick from the red curry and just perfect on a Friday night!
