Meatloaf Doesn't Photo Well...

I've pretty much stopped taking pictures of my meatloaves since they never turn out good but I just had to blog about this one. Why is it so special? Well, it's stuffed with Mozzarella Cheese AND topped with the most amazing Stubb's Hickory Smoked BBQ Sauce! It's been established that we love anything "stuffed" in this house and when you stuff a pound of meat with cheese...well, enough said! The secret to really moist meatloaf is using fresh breadcrumbs. You can easily make them in the food processor and it's so much better than dry. I'm really looking forward to the left-overs (if there are any left)!


Ingredients:

1 lb ground beef
1-1/2 c fresh breadcrumbs
1/2 c chopped onion
2 large eggs
1 Tbsp Italian seasoning
1/2 tsp salt
1/2 tsp ground black pepper
1-1/4 c BBQ sauce
1 c shredded Mozzarella Cheese

Prep:

1. Preheat oven to 350ºF.

2. In large bowl, combine the beef, breadcrumbs, onion, eggs, Italian seasoning, salt, pepper and 1 c BBQ sauce.

3. In a loaf pan, spread out half meatloaf mixture. Add mozzarella cheese on top, across the center of the mixture. Layer remaining mixture on top.

4. Spread remaining BBQ sauce on top of meatloaf. Bake to 165ºF or about 1 hour. Let sit for a few minutes before slicing.
