On a Coconut Curry Kick!

I've been on a Coconut Curry kick lately (ever since I ordered 12 cans of coconut milk!) and tonight I made Thai Braised Chicken. Instead of finishing the dish off in the oven, I simmered it on the stovetop until the chicken was cooked through, and the meat came out so tender and flavorful! I also added some bell peppers and served it with rice to soak up all the yummy sauce. A perfectly simple and tasty Sunday night dinner!
