I found this recipe for Mango Chicken Curry and thought the combination was really interesting. Since I really like mango salsa on just about anything and the author says it just "works", I decided to give it a shot. I left out the raisins since Greg's not a fan and substituted coconut milk for the heavy cream cuz I just love it in curry dishes. I also skipped the process of pureeing the sauce cuz I like the texture of the bell pepper and mango chunks (and cuz I'm lazy). The verdict? Mango and chicken does work! It wasn't too sweet at all and the curry gave the dish just the right amount of heat. A perfect meal on a Sunday night!
