"Would you think less of me if I made Pad Thai from Paula Deen?" That was the question I asked Greg after watching a Paula's Home Cooking episode called Thai for My Guy. His answer was "Of course not!" so I saved the recipe to make ASAP. I did make a few adjustments like leaving out the peanuts, cilantro and bean sprouts since Greg's not a fan. I cooked the eggs on the side cuz I learned from my fried rice experiences that they maintain their flavor better that way. I also had some left-over coconut milk so I stirred it in to make a creamier sauce. I'm proud to say that my Pad Thai tasted pretty authentic or at least very much like what we would order at a Thai restaurant!
