I keep a jar of Emeril's Essence at all times cuz it's literally good on everything. It's the perfect blend of spices and really "kicks things up a notch" (as Emeril would say)! Tonight I made his Southern-Style Pan-Fried Catfish and served it with my go-to Cheese Grits. The fish turned out so incredibly flavorful and the cornmeal crust gave it such a nice texture. Greg's usually not a big fish eater but he finished every bite (with some extra Louisiana Hot Sauce, of course!) so that shows you how yummy this was!
