Tonight's dinner was inspired by Aarti's Meatball Curry. I made a few changes according to our taste and what I had on hand and it was an amazing meal!
Meatballs:
1/2 lb ground beef
1 Tbsp green curry paste
1 tsp ginger, grated
1 tsp dried parsley
1/2 tsp salt
Curry:
1 Tbsp canola oil
1/2 c onions, chopped
2 cloves garlic, minced
1 Tbsp ginger, grated
1 c tomatoes, diced
1 tsp ground coriander
1 tsp ground cumin
1 tsp ground mustard
1/2 tsp cayenne pepper
1 (14-oz) can unsweetened coconut milk
1 Tbsp minced fresh parsley
1 tsp lime juice
Prep:
1. In a bowl, mix the ground beef, curry paste, ginger, parsley and salt together until just combined. Roll into 6 golf-sized balls.
2. Heat oil in a Dutch oven over medium-high heat. Add the meatballs and brown on all sides. Remove and keep warm.
3. Add the onion, garlic and ginger and cook until golden brown. Add the tomatoes, ground coriander, cumin, mustard and cayenne pepper. Stir and cook 30 seconds.
4. Add the coconut milk and bring to boil. Turn down to a simmer and add the meatballs back. Simmer until the meatballs are cooked through, 15 to 20 minutes.
5. To finish, add the parsley and lime juice. Serve over rice or with Naan.
