Ever since I discovered how yummy lamb shanks are, I can't seem to get enough of them! Tonight I picked up 2 HUGE ones from Safeway and couldn't be happier! I braised them low and slow in a sauce made from beef broth, curry powder, onions and carrots. The meat was fall-off-the-bones tender and incredibly flavorful! Served over some couscous and Sunday night dinner couldn't have been better!
