Coconut and Curry are seriously a match made in heaven and it never fails me no matter what else goes in it. Tonight, I made this Creamy Coconut Pork Curry and it was GOOD! I left out the green beans and substituted parsley for the coriander (which is another name for cilantro) cuz hubby's not a fan of either. I also added a sprinkle of brown sugar to balance out the spicy curry. Such a yummy dish and quick for a weeknight!

I've done that sub a few times, too, because it seems like I often have extra parsley in the veggie bin in the fridge, but not cilantro. ;)
