Unfortunately, living in a gated community means that we don't get any Trick-or-Treaters, which I'm pretty bummed about since I love seeing lil kids dressed up in their costumes. So to make up for it, I decided to cheer myself up with some Pumpkin Muffins! These came out amazing, perfectly sweet from the chocolate chips with a wonderful crunch from the sunflower seeds. Our house smelled just like the holidays as these muffins were baking in the oven and I can't wait for Turkey Day!
Ingredients: (6 muffins)
1 c all-purpose flour
1/2 c granulated sugar
1 tsp pumpkin pie spice
1/2 tsp baking soda
1/8 tsp salt
1/8 tsp baking powder
1/4 c (1/2 stick) unsalted butter, melted
1 egg
1/2 c pumpkin puree
1 tsp vanilla
1/2 c white chocolate chips
1/4 c sunflower seeds, roasted
Prep:
1. Preheat the oven to 350°F. Spray or line 6 muffin cups.
2. In a bowl, mix the flour, sugar, pumpkin pie spice, baking soda, salt, and baking powder together.
3. In another bowl, whisk the melted butter, eggs, pumpkin, and vanilla together. Slowly add the flour mixture to the wet mixture until just incorporated. Stir in the white chocolate chips and pumpkin seeds, leaving some to add to the tops of the muffins.
4. Spoon the batter evenly into the muffin tray, filling to the top. Sprinkle each muffin top with a few reserved chips and seeds.
5. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
